Hummus and Kale Salad....Yum!

Hey Y'all-


The holidays are coming, the holidays are coming! And with that means great recipes. I love baking and in the recent months have started to really learn how to cook, and while I am no where near being domestic, I think I am getting pretty good. Since I am home a lot right now I am in a snacking mood some days, but I love healthy snacks and today I have two great recipes to share with  you. 


The first is Hummus - 
You need: 


16 oz can of Chickpeas - Rinsed and Drained
7 oz roasted red pepper - Rinsed and Drained
1/2 Cup Non-Fat Yogurt
1 Clove Garlic - Chopped
1/4 Teaspoon Salt
1/4 Teaspoon Pepper


Put all ingredients in food processor and blend until smooth. Serve with pita chips or bruschetta bread. 


The Second is Kale Salad- 


You Need: 

2 Bunches of Curly Kale
Dried Cherries
Walnuts
Tomatoes
Extra Virgin Olive Oil
Tiny Baby Carrots

Clean and rinse the Kale, toss with very little olive oil, add dried cherries, chopped walnuts, tomatoes and tiny baby carrots. Toss all together and you will have a nice crisp Kale Salad!
